Banana Tea Bread
1 3/4 cup sifted whole wheat or other whole grain flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
6 tbls butter, softened
1/3 cup maple syrup
2 eggs, well beaten
2 or 3 mashed ripe bananas
1 cup walnuts, chopped
Sift together the flour, baking powder, baking soda and salt. Cream the butter, add the maple syrup gradually and continue working, blending well. Add the beaten eggs and beat well. Add the flour mixture alternatively with the bananas a small amount at a time, stirring in each addition until smooth. Do not over mix.
Turn into a well-greased or parchment-lined loaf pan (8 1/2” x 4 1/2” x 3”) and bake for about 1 hour at 350 degrees. The loaf is done when the cake tester or toothpick comes out clean or with just a few crumbs. Let cool for a few minutes before turning out of pan. Cool completely before slicing.
Yield: 1 loaf
